I know it can be hard keeping costs down when you're trying to travel on a budget. But I'm here to help you do exactly that, with a cheap, easy and Healthy Backpacker Meal each week. 

Rachels Cheap, Easy Backpacker Meals

  5. Fettucine Bolognese
  6. Pork Curry with Pineapple and Snow Peas

  8. Olio e Aglio Pasta (Angel Hair Pasta)
  9. Apple Coleslaw

 

Pasta with ham, tomatoes & feta

Cooking & Preparation Time 20 minutes

Ingredients (serves 4)

  • 300g penne pasta
  • 1 1/2 tbs extra virgin olive oil
  • 1 can crushed tomatoes
  • 2 crushed garlic cloves
  • 200g chopped ham
  • 150g crumbled feta
  • 1/4 cup small fresh basil leaves

Method

  1. Cook the pasta in a large saucepan of salted boiling water and continue stirring, Most pastas cook in 8-12 minutes. Check the package directions!
  2. Meanwhile, heat the oil in a large, deep frying pan over medium heat. Add the tomatoes, garlic, ham to the pan.
  3. Add the pasta, and feta and toss until well combined and heated through.
  4. Sprinkle with the basil. Season with pepper to serve.
  5. Enjoy!

Budget Super Saver Tips:

- If you're on a shoe string budget and want to save a little more swap the feta for Parmesan cheese, which can be found in the pasta aisle of most supermarkets for around a couple of dollars.

- Stretch out the meal by adding extra pasta or tomatoes, depending on your liking.

- 'Share with friends', you can easily make a huge batch and split the cost between your fellow backpackers
